Collard green wraps are the new wraps! They are full of nutrition & an absolute brilliant way to get in your greens! It’s like you’re eating a salad wrapped in one big roll! Collard wraps are perfect for doing away with breads or traditional bases for wraps. Collard wraps are simply delicious!! You can add ALL of your favorite stuffing’s at will! Add as little or as much as you please! These wraps are filling, delicious, nutritious, easy, & the ideal food for meal preps! Great for days that require no effort in the kitchen! Hey… I’m totally here for it! Collard wraps are another clever way to get your kids to include more greens into their diet.
Collard greens are an excellent source of vitamin K, vitamin A, magnesium, vitamin C, dietary fiber, & calcium. They’re also a good source of vitamin E, copper, protein, magnesium, vitamin B5, omega-3 fatty acids, vitamin B1, & potassium. If you’re not a fan of collard greens, I think these wraps may convince you otherwise. What have you got to loose? Try them!! As always, thank me later!!
Ingredients
2 collard green leaves (or 1 leaf per/wrap)
2 tbsps of quinoa per/wrap (or add to liking)
1 chicken breast sauteed & chopped
2 small cherry tomatoes (sliced)
yellow onion (small piece thinly sliced)
Seasoning
black pepper (to taste)
pink himalayan salt (to taste)
Dressing
olive oil mayo (thinly spread)
Preparation
In a large pot, fill 1/2 way with water & bring to a slight boil. Add your collard wraps & blanch for 1-2 minutes. Turn off heat & remove collard wraps. On a cutting board place your wraps face down. Take a knife & cut off the bottom thick stem. Then take your knife & slim out the remaining thickness. Now turn your collard wrap face up, spread your mayo, & begin to insert your fillings. Finally, you are ready to WRAP & ROLL! Take your collard wrap & roll in the same manner as you would a burrito or a soft taco wrap. Enjoy!!
