When I say it gets no easier than this, trust me, this salad takes every bit of 15 minutes to be prepared & that’s it!! If you’re looking for a quick, clean, healthy/greenery dish, you’ve got it! And granted, I was totally lazy today & didn’t feel like preparing a huge meal. Yep, I’m guilty but it’s a good guilt!! 💁🏽
Ok… So here’s what you’ll need: Kale, tomatoes, 1 lemon, pepper, sea salt, olive oil, & Quinoa! That’s it!!
How to prepare:
First, I washed/prepped my kale. Once I completed that, I chopped my Kale, diced a fresh tomato & tossed it together in a bowl. (Set to the side & prepare your dressing)
Next, I juiced me a fresh lemon, added my drizzle of olive oil, sea salt, a pinch of pepper, & a few shakes of accent. Stir together & drizzle over salad.
Lastly, I cooked my Quinoa & added it over my salad! Annnddddd, you’re done! Toss it all around & enjoy!!
Feel free to prepare your Quinoa first to save a little time. On a normal day, I would’ve pre-cooked my Quinoa, but I was in starve moad & prepared at will! * Happy Eating
